Veggie Lasagna with Country Crock *Giveaway closed* #CountryCrockCasserole

My mother in law does not eat red meat so we had to come up with something that she would like and we all love my husband’s Veggie Lasagna!

If your looking for a yummy and easy dinner option throughout the week we have a tasty Veggie Lasagna to share with you! The ingredient list is actually really small and we always have these items on hand!

We like using the frozen vegetables on those busy school nights because they take only a few minutes to cook on the stove top


Before starting anything get a large pot of water boiling for your lasagna noodles!

Next  bake the Panko Crumbs, we added two table spoons country crock spread in a saucepan and added some sriracha sauce, it does not make the Panko spicy but adds a little flavor.

Mix the Panko and the sauce until the Panko is covered. Place in oven for about 20 minutes at 350.


While the Panko is baking, heat the veggies in a large pan and add some country crock spread to them!


Once your noodles are cooked and your veggies hot it’s time to start layering your lasagna! This can be done anyway you want really! I am not a fan of a ton of cheese so I did not add a lot but you can add as much or as little as you want, in fact you don’t even have to use the lasagna noodles either.

We layered ours with Sauce on the bottom, noodles, veggies, mozzarella cheese, Panko mixture, fresh spinach and kept layering it until we got to the top of the casserole dish and then layered the Panko on top.

Bake for about 25 minutes at 350 degrees.
