Flaxseed and Coconut Flour Crusted Chicken #CarringtonAllGoodApril

We have been using Coconut oil for cooking for quite a few years now so I was really excited to check out Carrington Farms along with the Milled Flaxseed. I have tons of recipes on Pinterest that use flaxseed and have been wanting to incorporate it more into my diet, especially since I have been trying to go Paleo.

I decided why not make a tasty flaxseed and coconut flour chicken with veggies for dinner. I love the flavor that coconut flour gives and thought the flaxseed would be tasty too. And it was!


  • 1/2 cup flaxseed
  • 1/4 cup coconut flour
  • 1 egg
  • 1 cup almond milk
  • boneless skinless chicken breast (I used three)
  • coconut cooking oil


  1. combine flaxseed and coconut flour in bowl using a fork
  2. combine egg and almond milk in another bowl
  3. fillet chicken into chicken tender portions, pat dry with paper towel
  4. make sure you are heating up your coconut cooking oil in frying pan before next step
  5. dip the chicken in egg almond milk mixture and then coat with the flaxseed mixture
  6. fry your chicken until chicken is done flipping chicken over to cook both sides


Serve with veggies!
