Simple Life: Easy Cheesecake with #MountainHighYoghurt

Since Mikey was born I have been trying hard to get back to my healthy eating and creating fun ways to eat clean and have less gluten.

Did you know you can use Mountain High Yoghurt as a substitute for sour cream, mayonnaise or butter? Use Mountain High Yoghurt to make one of your favorite recipes healthy and delicious. For instance, you can use it in things like muffins and cookies for an amazing, moist texture!

Yes even though I am offering my family more clean eating meals that doesn’t mean I am going to drop the sweets! We used Mountain High Yoghurt to create a tasty Cheesecake!

Ingredients for Crust:

  • 1 cup oats
  • 2 tbl honey
  • 1 egg white

Mix honey and egg white together then add oats. Pour at the bottom of your spring form pan (or cake pan) and bake at 350* for about 20 minutes.

Ingredients for Filling:

  • 2 Cups Mountain High Yoghurt
  • 1/4 cup honey (or more depending on taste)
  • 3 eggs
  • 1 1/2 teaspoon vanilla
  • pinch of salt

Mix the yoghurt and honey together until smooth, then the rest of the ingredients in a medium mixing bowl. Pour over the crust and bake for around 45 minutes.

  1. Oh yum, we love cheesescake, but who doesn’t? I love that I can get Mountain High in large tubs- it saves so much money and waste over small individual cups!

  3. I love that something so indulgent can actually be good for you. My kids might eat this, too. They don’t like cream cheese but they love yogurt.
