Yesterday I went to my in laws house and the girls and I baked up a storm with Grandma! We had so much fun!!
One thing my Aunt always made was Coconut Candy Balls! So I bought all the ingredients and by memory made them. They came out really good. Everyone said I did a good job making them by memory.
Rolling the candies into balls. After I rolled them into balls I stuck them in the freezer for about 20 minutes to get them hard so they wouldn’t come apart when I put them in chocolate:
I like to take the entire dough and saran wrap it. Then stick it in the fridge for a few hours.

Things You’ll Need:
- 1 Stick softened butter
- 1 Can Eagle Brand sweetened condensed milk
- 2 Boxes powdered confectioners sugar
- 14 Oz. Coconut
- 2 tsp. vanilla
- 1 piece paraffin (wax)
- 12 oz semi-sweet chocolate chips
Mix softened butter and confectioner sugar thoroughly adding the can of Eagle Brand sweetened condensed milk slowly.
Add vanilla and coconut. Mix very thoroughly. Put the entire mixture in saran wrap and refrigerate for up to 4 hours. Then roll into small balls. Put back into refrigerator for about 20 minutes.
Slice the paraffin and mix with chocolate chips in a double boiler. Melt completely. Place a toothpick in the candy and dip into the chocolate, allowing the excess chocolate to drip back into the boiler. Place on wax paper and allow to stand overnight.
