Healthy Weight Commitment Foundation

Bumble Bee is a founding member of the Healthy Weight Commitment Foundation (HWCF), a coalition of more than 40 major brands, retailers and non-profit organizations committed to reducing obesity, especially childhood obesity, by 2015.
The HWCF wants to help consumers lead healthier lives by making energy balance – calories in balanced with calories out – a daily habit. They will do this by increasing access and opportunities for physical activity, healthier nutrition options and raising awareness of the energy balance approach – in the marketplace, in the workplace and in schools.
A great way to start with your family is starting in the kitchen. Toss those fatty foods, snack, potato chips and replace them with fruits, veggies, pretzels; healthier food options.
For those of you who like Fish try adding more fish into your diet. I myself only like tuna (weird right?) So I have told Hubby to make dishes with tuna that taste good.
In fact tonight I’ll be making the Savory Tuna And Zucchini Casserole for my family.

INGREDIENTS:
2 cans or pouches (5 oz) Bumble Bee® Tuna, drained and flaked
3 cups cooked spiral pasta
3 tablespoons vegetable oil
1 ½ cups coarsely shredded fresh zucchini
1 cup diced celery
½ cup chopped onion
4 tablespoons flour
2 cups low-fat milk
¾ cup grated Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon dill weed
1 teaspoon salt
1 cup soft fresh bread crumbs
1/8 teaspoon paprika
2 tablespoons margarine
DIRECTIONS:
Preheat oven to 350°F. Prepare pasta according to package directions. Set aside. Sautee zucchini, celery and onion in vegetable oil for 2 -3 minutes. Stir in flour and cook on low stirring contantly for 2 minutes. Blend in milk, ½ cup cheese, parsley, salt and dill weed. Cook stirring constantly until mixture thickens and boils. Add tuna and pasta, mix well. Pour mixture into prepared casserole dish. For topping: combine bread crumbs, 1/4 cup cheese and 2 tablespoons margarine. Top tuna casserole with crumb mixture and sprinkle with paprika. Bake in oven at 350°F for 30 minutes.
