Easy Chicken Mexican “Casserole” #CountryCrockCasserole *Giveaway closed*
I know, I know technically this looks like enchiladas but we added some extra yummies to it so it’s a Casserole! My girls joined me in the kitchen and we came up with something we would all like!
Ingredients:
- 2 Tbs. Country Crock Spread
- 3 chicken breast strips
- 1 Can Reduced sodium black beans
- 1 Can Mexicorn
- 1 Block Cheddar Cheese – grated
- 1 small can Enchilada Sauce
- Corn Tortillas
Preheat oven to 350 degrees. Start by melting the 2 tabs. of Country Crock Spread in a skillet and then add your chicken breast strips. Cook until done. Next you can either layer your corn tortillas and layer the ingredients or roll the ingredients into the tortilla.
Add a small layer of Enchilada sauce to the bottom of your Casserole Dish.
I found placing a tortilla on a plate then adding the ingredients was the easiest. Layer the chicken, cheese, beans and mexicorn on the tortilla.
Roll it up or lay it flat in your casserole dish.
Continue to do the same until your dish is full. Add more beans, mexicorn and cheese on top. Then add as much or as little enchilada sauce on top as you want.
Bake for 20 minutes at 350 degrees and your done!
I was a little anxious when i served the kids, I wasn’t sure if would like it. When they all asked for seconds I knew it was a hit!
