We hit Arizona about an hour ago and have another hour or so to Phoenix. Then to Tucson and hopefully Tombstone.

MommyMandy is Going on Vacation!

Tomorrow we are leaving bright and early and taking a trip to Texas! We are so excited and can’t wait to see everything a long the way.

What are some things we should check out on the way from Southern California to Texas?

Here are a few places I have bookmarked

But I’d LOVE ideas and places we HAVE to stop at!!! Once we get to Texas we have so many things we want to do and see! So excited and we can’t wait!

Sarah’s Kindergarten Alphafriend’s Circus

Mrs. A (Sarah’s Kinder teacher.. aka grandma)  has been working on the Alpha Friend’s Circus since the day school started last August. The kids have been practicing the songs all year long and throughout the year we have done some serious costume shopping!

Sarah was Queenie Queen and she had so much fun!  This is what she was singing when it was her turn to stand in the rings.

Queenie has qualified to run in the race.
She’ll run very quickly to keep up the pace.
Queenie is quite fit. She’ll stretch for a while.
Queenie will not quit.
She’ll run every mile.

Even Samantha got in on the fun and dressed up as a clown!

Black & Decker Ultimate Sandwich Contest: Pesto Chicken Sandwich

When I was asked to be apart of the Black & Decker Ultimate Sandwich Contest I couldn’t wait to start brainstorming a sandwich that the entire fmaily will love.  I had to think of a sandwich that adults would like and kids too. My girls are picky eaters and both of them do not like steak (although they like hamburger), and I wanted something that would be a more healthier option as well.

I love chicken, and pesto so what better way to put them together and make a Pesto Chicken Sandwich.  As part of the contest we were sent the Black & Decker Counter-top Convection Oven and asked to use it with creating our sandwich.

Below is the recipe and ingredients for the sandwich.

Pesto Chicken Sandwich:

For The Chicken:

  • One large freezer bag
  • Boneless skinless chicken breasts sliced into 5 thin pieces
  • 1 Bottle Italian Dressing
  • 1/4 cup chopped red onion
  • 2 tbsp pesto
  • 3 tbsp balsamic vinegar

Add all ingredients into the large freezer bag, and marinate for 30-60 minutes depending on how much time you have.

Pesto Aioli:

  • 1 Cup mayo
  • 3/4 cup Pesto

Mix the mayo and pesto and set aside in fridge.

Ingredients for Sandwich:

  • Sheepherder’s Bread
  • Provolone Cheese
  • Jar roasted red peppers
  • Romaine lettuce

I decided to bake my chicken in the Black & Decker Counter-top Convection Oven to show what all you can do with the Oven.

Set your Black & Decker Counter-top Convection Oven dials to:

  • Bake
  • *375
  • 35 minutes
  • Flip chicken halfway through cooking

The Convection Oven comes with it’s own baking pan. Line it with foil and place your chicken on the pan.

While your chicken is baking you can make your Pesto Aioli Sauce.

I placed my aioli with my red peppers and provolone cheese.

When the Chicken is done, take it out and cut it into thin slices.

Now it’s time to create your Sandwich!

  • Take two slices of sheepherder’s bread
  • On one slice add your provolone cheese
  • Add chicken over the cheese
  • Add roasted red peppers over the chicken (to taste)

Turn oven on to toast. When the bread is starting to toast flip it over. The bread will be lightly toasted (about 1 minute)

Once your bread is toasted (cheese will be melted), add your other ingredients:

  •  Aioli Pesto
  • Romaine Lettuce

You can add as much Aioli or as little as you want. I wanted a lot!

Cut your sandwich, serve with your favorite side dish and enjoy!

Happy Mother’s Day

Did you know Mother’s Day was originally from when Moms was grieving their children lost due to war? 

 In 1870, Julia Ward Howe, a suffragette and abolitionist, issued one of the first calls for a celebration of mothers. Julia wrote a proclamation titled “Mother’s Day for Peace” as a pacifist reaction to the Civil War. She called on mothers to have a voice in their societies and to use that voice to oppose war and speak for peace.

In 1914, Anna Jarvis convinced the U.S. Congress to pass a joint resolution establishing an official Mother’s Day. Anna’s campaign for Mother’s Day drifted away from emphasizing women’s roles as peacemakers as Julia Ward Howe had done, and focused instead on women’s role in the family.

Now we celebrate Mother’s Day of a day to just say Thank You! to our moms, the women who have loved us, taken care of us, sheltered us, and loved us. This doesn’t mean they were our biological mothers, but women, maybe our friends moms, or or grandmother, or an Aunt… she has given us tools to make us who we are today…

Today we say Thank You…. Thank you for everything you have done for us, the lessons you have taught us and what we have learned from you.

I can say that today my motherhood has been changed  dramatically thanks to all those amazing women who have made an impact in my life and have taught me how to be a better mom for my kids.

Jennifer Garner and Frigidaire Go to Bat in Support of Save the Children

Today we headed out to Glendale with other Mom Bloggers to the awesome Frigidaire Stain Games. 

Jennifer Garner and Frigidaire teamed up and went to bat against stains to spread awareness about the work of Save the Children. You can visit and take your own virtual swing to support the cause.

For every swing, Frigidaire will donate $1 to Save the Children towards their overall commitment of $500,000 to the organization. Participants will also be entered for a chance to win a brand new Frigidaire Affinity washer and dryer set featuring Ready Steam, ensuring whiter whites and improved stain removal.

 The Stain Games was a blast and the kids had fun doing different drills. Samantha has never played baseball before so learning to bat and catch a ball was a lot of fun for her!

Wordless Wednesday: Frigidaire Stain Games

Today Samantha and I headed out to the Glendale Sports Complex for a fun Frigidaire Event with Jennifer Garner.

The “Stain Games” were conceived to celebrate Frigidaire’s new stain-fighting washer and dryer and help promote healthier lifestyles for children in need. “Stain Games”is  to help raise funds and awareness for Save the Children’s U.S. Programs.

Today Sarah lost her very first tooth!She fell a few months ago and hit the tooth and you could tell the fall killed the root quickly. She bit into a piece of pizza today and the tooth pushed outward. she let me pull it right out.

B Kind 2 Earth Day

I am so excited for this awesome  Earth Day project with Nickelodeon, the National Wildlife Federation and It’s called B Kind 2 Earth Day!

The idea is simple: Promise to do at least one kind thing for the earth on Earth Day on Friday, April 22nd and get others to do the same.

 In so doing, we can make Earth Day matter to us and our families by getting into action in real ways, big and small, and collectively have a huge impact.

On Friday, I plan to get as many kids at school helping during lunch time cleaning the playground of all the trash!

Small Style- Disney Comfort

Another week of Small Style over at at Mama Loves Papa.

This past weekend we headed to Disneyland and I knew the girls would want to be comfortable.

I was shocked to see this size 3T outfit still fits Sarah!

  • Pink and White striped top is from Gymboree
  • Tan shorts are from Target(They were Samantha’s)
  • Shoes are Sketcher Twinkle Toes. We picked these because they light up and would look cool at night with the Disney lights!

Samantha’s outfit:

  • complete outfit is from Abercrombie & Fitch Kids.
  • Her shoes are Vans which are super popular with the tween kids at our school.

Disney Mickey Ears we purchased for the girls on their first trip to Disneyland in 2006.
