When I was asked to be apart of the Black & Decker Ultimate Sandwich Contest I couldn’t wait to start brainstorming a sandwich that the entire fmaily will love. I had to think of a sandwich that adults would like and kids too. My girls are picky eaters and both of them do not like steak (although they like hamburger), and I wanted something that would be a more healthier option as well.
I love chicken, and pesto so what better way to put them together and make a Pesto Chicken Sandwich. As part of the contest we were sent the Black & Decker Counter-top Convection Oven and asked to use it with creating our sandwich.
Below is the recipe and ingredients for the sandwich.
Pesto Chicken Sandwich:
For The Chicken:
- One large freezer bag
- Boneless skinless chicken breasts sliced into 5 thin pieces
- 1 Bottle Italian Dressing
- 1/4 cup chopped red onion
- 2 tbsp pesto
- 3 tbsp balsamic vinegar
Add all ingredients into the large freezer bag, and marinate for 30-60 minutes depending on how much time you have.
- 1 Cup mayo
- 3/4 cup Pesto
Mix the mayo and pesto and set aside in fridge.
Ingredients for Sandwich:
- Sheepherder’s Bread
- Provolone Cheese
- Jar roasted red peppers
- Romaine lettuce
I decided to bake my chicken in the Black & Decker Counter-top Convection Oven to show what all you can do with the Oven.
Set your Black & Decker Counter-top Convection Oven dials to:
- 35 minutes
- Flip chicken halfway through cooking
The Convection Oven comes with it’s own baking pan. Line it with foil and place your chicken on the pan.
While your chicken is baking you can make your Pesto Aioli Sauce.
I placed my aioli with my red peppers and provolone cheese.
When the Chicken is done, take it out and cut it into thin slices.
Now it’s time to create your Sandwich!
- Take two slices of sheepherder’s bread
- On one slice add your provolone cheese
- Add chicken over the cheese
- Add roasted red peppers over the chicken (to taste)
Turn oven on to toast. When the bread is starting to toast flip it over. The bread will be lightly toasted (about 1 minute)
Once your bread is toasted (cheese will be melted), add your other ingredients:
- Aioli Pesto
- Romaine Lettuce
You can add as much Aioli or as little as you want. I wanted a lot!
Cut your sandwich, serve with your favorite side dish and enjoy!
